Prep time: Less than 30 minutes

Cooking time: 30 - 40 minutes

Yield: 20 brownies

Dietary: Suitable for vegetarians

Ingredients

  • 8oz unsalted butter
  • 1lb superfine sugar
  • 5oz dark chocolate, broken into pieces
  • 5 free-range medium eggs
  • 4oz all-purpose flour
  • 2oz cocoa powder
  • 1 tsp salt
  • ½ cup semi-sweet chocolate chips (or more if you prefer!)

Method

  • Preheat your oven to 375 degrees Fahrenheit. Line a 20 x 30cm (8 x 12in) baking pan with parchment paper and grease with a little butter.
  • Add the butter, sugar and chocolate to a large saucepan and on a medium heat, stir until melted.
  • Remove the mixture from the heat and let it cool for a few minutes. Then whisk in the eggs.
  • Sift in the flour, cocoa powder and salt and then stir until combined. Be careful not to overmix as this will give the brownies a more cake-like consistency.
  • Gently fold in the chocolate chips.
  • Pour the brownie batter into the prepared baking pan and bake for 30 - 40 minutes, depending on how moist or firm you like your brownies.
  • Take out of the oven and leave to cool in the tin. Once cooled, remove the brownies from the tin and cut them into squares.
  • Serve with a scoop of ice cream or whipped cream and enjoy!
  • Store the leftovers at room temperature in an airtight container or wrap with plastic wrap for up to 3 days.
