Famished Fridays: Vegan High Protein Sundried Tomato Chickpea Pasta Alfredo

Welcome to the second article of our Famished Fridays recipe series! On the first Friday of every month we’ll be bringing you a delicious recipe to tickle those taste buds and inspire your inner chef. To find out what you missed last time, click here. This time, we're bringing you a tasty alternative to the classic Alfredo Pasta packed with fiber and protein. Vegan or not, you will want to try this creamy deliciousness.

Prep time: 5-10 minutes

Cooking time: 20 minutes

Yield: 4 servings

Dietary: Vegan, Vegetarian, Gluten-free, Dairy-free, Egg-free, Grain-free

Ingredients

  • 1 tbsp olive oil
  • 3 garlic cloves
  • 1 tbsp dried oregano
  • 1/2 cup sun dried tomatoes in oil (finely chopped)
  • 2 tbsp flour (you can use arrowroot, almond or plain GF flour)
  • 1 1/2 cup almond milk (unsweetened)
  • 2 tbsp tomato paste
  • 1/4 cup parmesan cheese (vegan)
  • 8 oz Chickpea pasta (other pasta types work too)
  • 1 handful fresh basil

Method

  • Boil water for the pasta and cook as per instructions on the package. When done, drain and set aside in the pot to keep them warm. 
  • Heat olive oil in a sauce pan, add the crushed garlic cloves and sauté for 1 minute. Add the oregano, half of the chopped sun dried tomatoes and the GF flour while stirring well. Cook for another minute. 
  • Carefully stir in the almond milk and simmer for about 2 minutes until thickened. Add the tomato paste and the parmesan cheese. Stir again. 
  • Transfer all of the sauce to a blender (or stick blender) or mixer and process for 1-2 minutes until the sauce is creamy and smooth.
  • Transfer the sauce back into the pan and mix with the cooked chickpea pasta and the remaining half of the sun dried tomatoes. 
  • Sprinkle fresh basil and some more parmesan cheese on top. Enjoy!
  • Leftovers can be kept in an airtight container in the fridge for about 2-3 days.
