Famished Fridays: Vegan High Protein Sundried Tomato Chickpea Pasta Alfredo

Welcome to the second article of our Famished Fridays recipe series! In this series, we’ll be bringing you delicious recipes to tickle those taste buds and inspire your inner chef. To find out what you missed last time, click here. This time, we're bringing you a tasty alternative to the classic Alfredo Pasta packed with fiber and protein. Vegan or not, you will want to try this creamy deliciousness.

Prep time: 5-10 minutes

Cooking time: 20 minutes

Yield: 4 servings

Dietary: Vegan, Vegetarian, Gluten-free, Dairy-free, Egg-free, Grain-free

Ingredients

  • 1 tbsp olive oil
  • 3 garlic cloves
  • 1 tbsp dried oregano
  • 1/2 cup sun dried tomatoes in oil (finely chopped)
  • 2 tbsp flour (you can use arrowroot, almond or plain GF flour)
  • 1 1/2 cup almond milk (unsweetened)
  • 2 tbsp tomato paste
  • 1/4 cup parmesan cheese (vegan)
  • 8 oz Chickpea pasta (other pasta types work too)
  • 1 handful fresh basil

Method

  • Boil water for the pasta and cook as per instructions on the package. When done, drain and set aside in the pot to keep them warm. 
  • Heat olive oil in a sauce pan, add the crushed garlic cloves and sauté for 1 minute. Add the oregano, half of the chopped sun dried tomatoes and the GF flour while stirring well. Cook for another minute. 
  • Carefully stir in the almond milk and simmer for about 2 minutes until thickened. Add the tomato paste and the parmesan cheese. Stir again. 
  • Transfer all of the sauce to a blender (or stick blender) or mixer and process for 1-2 minutes until the sauce is creamy and smooth.
  • Transfer the sauce back into the pan and mix with the cooked chickpea pasta and the remaining half of the sun dried tomatoes. 
  • Sprinkle fresh basil and some more parmesan cheese on top. Enjoy!
  • Leftovers can be kept in an airtight container in the fridge for about 2-3 days.
